Ajo Blanco, a cold garlic and almond soup from Granada, is a great summer alternative to gazpacho. Ajo Blanco is made from bread, crushed almonds, garlic, olive oil and salt. Ajo Blanco was traditionally served to laborers in Andalucia as a mid-morning snack to hydrate and nourish them in the heat of the day. The almonds and bread used in Ajo Blanco were a great source of energy for the workers. Ajo Blanco is rich and savory with a delicate creaminess due to the ground almonds. Ajo Blanco is customarily served with a "papa asa" or baked potato for a complete meal. This Ajo Blanco is made by Despensa la Nuestra, a small company located in Cordoba. A group of women founded Despensa la Nuestra when the local sugar beet factory closed.
